…good cookies (see recipe below!).
…tulips.
…a nap in the warm sun.
…a mechanically gifted husband. He fixed three things for me last night in about an half hour that I’ve been fretting over for a few months now:
1. Baby monitor (It was not staying on and the volume dial was producing static noise.)
2. My 2.5″ SU circle punch (It stopped punching! *gasp!*)
3. My digital SLR (It had a grey dust spot showing up on pictures and I was apprehensive about trying to resolve the issue on my own!)
Here’s the previously mentioned cookie recipe: (The flavor of these remind me of the Girl Scout Thin Mints!!)
Mint Chocolate Delights
2 c. all-purpose flour
2/3 c. baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. (2 sticks) butter, softened
2/3 c. granulated sugar
2/3 c. packed brown sugar
1 tsp. vanilla extract
2 large eggs
1 2/3 c. (10 oz. pkg.) Toll House Dark Chocolate & Mint Morsels
PREHEAT oven to 325 degrees F.
COMBINE flour, cocoa, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by well-rounded tablespoons onto ungreased baking sheets.
BAKE for 11 to 13 minutes or until cookies are puffed and centers are set. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
YIELD: about 4 dozen cookies.
We baked one dozen of these and then made the rest of the dough into cookie balls and froze them. I think that was a wise decision as the ones we baked today are about gone already! 🙂 These seriously need to be rationed!! LOL!
